Place about 1/2 cup granulated sugar in a shallow bowl.The syrup will dry, leaving you with cranberries that are slightly sticky to the touch but not goopy. ![]() Spread the cranberries in a single layer on the wire rack and allow to stand for one hour at room temperature to allow the excess syrup to drip off. Drain the cranberries, reserving the cranberry-infused simple syrup if desired. Line a baking sheet with parchment paper or foil and place a wire rack in it.If the syrup is too hot when you add the cranberries, the cranberries will pop. Pour the simple syrup into a bowl and allow to cool slightly before adding the cranberries.Stir until the sugar dissolves completely. Combine the water and 1 cup of sugar in a small saucepan over low heat.Sugared Cranberries You will need to make these a day or two ahead! A few miles here and there and all of a sudden my gently used but still new enough Nissan is a dinosaur with no bluetooth, no navigation system, no keyless start, and no whatever it is that lets you stick your foot under the back bumper to magically open the trunk. A blink of an eye and 2008 is suddenly ten years ago. And of course, she was going to get this blog post written and posted!īut as we all know, time simply flies. ![]() Less sugar consumption, less time wasted tapping away at yet another mobile game, less instances of having to double-water the hallway peace lily because it hadn’t been watered for the past two weeks and its leaves were now drooping pathetically to the floor. Then Claire returned from two and a half weeks of pure gluttony, stood on the dusty bathroom scale, and solemnly determined that it was now the time to begin a new year of healthful eating, ample exercise, and eight hours of sleep per night. “Hmm…blog post? Nahhhh…” And just like that the fleeting thought of toiling on her blog post whilst on vacation dissipated as Claire headed out for yet another hedonistic night of unfettered eating. “Well, I edited the photos already, I just need to write the recipe and the blog post and I’ll have tons of time to do that in Taiwan,” Claire said hopefully as she boarded the plane with the horde of economy class sardines. “I can definitely write this blog post before we leave for Taiwan on the 22nd!” Claire exclaimed to her husband for an entire week as she sat on the couch watching YouTube instead. ![]() “At least a few of these photos are useable, I’ll have to edit them soon to get this done before the end of the year,” Claire mused a day later as she deleted badly composed/shoddily shot/badly lit photo after photo. “The second version of the cake turned out even better than the first, can’t wait to get this recipe up!” Claire smiled to herself as she sprawled on the kitchen floor snapping photos with her iPhone a few hours later. “It’ll be a wonderful end of the year post!” Claire thought with glee circa December 2017 as she dumped the cranberries into the saucepan. Just yesterday I was cooking two bowls of Easy Mac in my dorm mate’s microwave for dinner and then the day before that we were all jamming to umbrella-ella-ella-eh-eh-eh and the day before that I was eating a bean and cheese burrito off a styrofoam tray with the sweet strains of Usher blasting to a quad full of middle schoolers who didn’t realize what exactly he was yeah-ing about until they heard it again on the radio a few years later. Last year, you say? Last year was but twenty one days ago! Be careful my friend, that’s a slippery slope you’re on. Once for Friendsgiving and once again in December specifically for this blog. ![]()
